- Name
- Artichokes in the world! Where? When? Who? What? How?
- Topic
- Food Science, English, Cooking, Recipes, History (legend)
- Learning time
- 6 hours and 40 minutes
- Designed time
- 12 hours and 50 minutes
- Size of class
- 20 students of the cooking course aged 17-18
- Description
- Artichokes in the world! Where? When? Who? What? How? I am choosing this topic as the province of Catania is renowned for the produce of artichokes. Ramacca, a small town near Catania, has an artichoke festival as well as Castroville in CA, USA. So the topic can be analyzed from many different points of view such as area of production, artichoke season, import/export, artichoke food industry, benefits. At the end of the project the students should know where artichokes are grown, what season they grow, what benefits they have and many different recipes. The project could end with a competition on the best and healthy artichoke dish prepared by the students.
- Aims
- The students should improve their vocabulary about food and cooking methods, their knowledge about nutrients, compare and contrast the production in Italy and in other countries, describe a recipe. They will have to use all the skills: reading, speaking, listening and writing. They will be more competent about the nutrients contained in artichokes, the best ways to cook them and when to introduce an artichoke dish in a diet.
- Outcomes
-
- Knowledge Know more about their territory and other countries, learn about nutrients in artichokes and the way they can fit a diet
- Comprehension Reading comprehension, listening comprehension
- Analysis Analyze the production of artichokes in the world
- Evaluation The students should decide and evaluate when artichoke are good for one's health
- Application They should apply the acquired knowledge to create new dishes and diet plans

Brainstorming on Artichokes and Teaming up students
40 minutes)
-
Discuss20minutes20I would like to introduce the theme Artichoke before actually asking the students to work on it and I would use the program 'padlet" to stick all the relevant information the students would come up while brainstorming the topic in a collaborative way! I will accept any ideas the students will come up with as artichoke is a popular vegetable in Catania, especially as street food.
-
Collaborate20 minutes4I would use the team up tool to create teams of max 4 students. Each team should have a name chosen by the students and within each group, the students should have different roles: speaker, secretary, media expert, moderator
Notes:
Starting with a brainstorming on artichokes is one of the first techniques to SCAFFOLD the students learning process, connecting what they know with the new input that they are going to investigate

Readings: Festival in Castroville CA - USA and Sagra del Carciofo in Ramacca - Catania - Italy
195 minutes)
-
Read Watch Listen20 minutes20I would present two readings to the students: one on a small town in California that produces artichokes for the USA and the other one, on Ramacca, a small town that produces a great amount of the artichokes sold in Italy. Being the teams four I would give the same reading to two teams
-
Discuss1020After reading each team should decide and write down which are the info they would like to highlight. This first assignment can help the teacher to give a formative assessment
-
Collaborate20 minutes20Then I would put together a team with the reading on Ramacca, Catania - Italy and a team with the reading on Castroville - CA-USA.
-
Discuss10 minutes20The joined teams should analyze similarities and differences between the two towns' festivals and present their results with https://canvanizer.com/ Once again the students are going to be assessed in a formative way. However, they have also done a peer assessment once they have exchanged information and put the information to present them
-
Read Watch Listen10 minutes20After the reading, the students would watch two short videos: Castroville's Artichoke festival Ramacca's Sagra del Carciofo (no English version available)
-
Collaborate20 minutes20After watching the videos, I would ask the students to get back into the original teams and decide what aspect they would like to analyze in their research topic about artichokes.
-
Investigate15Once the students come up with their own research questions they should write it on "padlet"
-
Practice9020Besides practicing reading, listening, speaking, the students have the opportunity to practice using new digital devices, such as prezi, tackk, voki., https://canvanizer.com/
Notes:
The reading and watching activity are two more ways to SCAFFOLD the students' attempt to find their research questions, guiding them before they start their own search.

Students' research question and presentation
400 minutes)
-
Investigate12020Students should investigate their research topic and find the material for their final presentation. During the investigation phase, the teacher asks questions to keep the students on track and assess their progress.
-
Read Watch Listen8020Students read watch and listen to the material for their final presentation.
-
Produce80 minutes20Students should present the results of their investigation in their favourite digital format and there should be a peer assessment according to the rubric I am attaching
-
Collaborate12020The presentation should be the result of students' cooperation and collaboration as they have been assigned different roles at the beginning of the project.
Notes:
Through all the project I will support my students highlighting all the positive results, efforts they will achieve and I will not criticize what they don't get immediately right, but I will suggest them to look at other aspects as well. I will show them what they are are good at (I always do that in my classes) and motivate to try new ones where they might be as successful as in the ones they are already competent in.

-
Practice120The students cook the dishes and a team of teachers will choose the best one according also to the students dietary comments
-
CollaborateThere can't be no cooking without collaboration. Working in a kitchen means working as a team!
